Tasting notes

Perfect pairings

Beau Michelle stands out for its alcohol content of just 9%, well below that of traditional sakes.
We recommend pairing this sake with Caprese salad (tomato, mozzarella and fresh basil), pork and kimchi, figs with fresh cheese, stir-fried pork with kimchi, melon and Parma ham, white fruit sorbets, pan-seared scallops, foie gras, sea bream tartare or lobster salad.

Tasting notes

Fruity, floral and aromatic sake with a slightly golden colour
Palate: medium-dry, with a fresh balance of fruity sweetness and berry acidity that unfolds across the palate

Description

This medium-dry sake is made by Tomono brewery in Saku, Nagano, amid a mountainous landscape where complex terrain and high-quality spring water help ensure excellent production. It offers fruity, aromatic notes.
On the nose, it evokes white grapes, lychee, nashi pear, cherimoya, jasmine blossom and marshmallow.
On the palate, it has pronounced apple notes and a must-like flavour, with a pleasing balance of acidity and sweetness and a delicate yet lingering finish. Overall, it is reminiscent of a white wine.

Tomono Shuzo

The origins of Tomono Shuzo date back to “Tomono Shoten”, a rice wholesaler founded in 1889 in the Saku region of Shinshu. This deep expertise in selecting the finest rice paved the way for the launch of their sake production in 1901, weaving a rich history spanning more than 120 years.
Driven by the conviction that “true local sake must be brewed with locally grown rice”, they use crystal-clear spring water from the Yatsugatake mountain range. Their selection is strictly limited to two premium sake rice varieties from Nagano Prefecture: “Miyama Nishiki” and “Hitogocochi”. To treat every grain with the utmost care, all rice intended for their Junmai-grade sake and above is meticulously hand-washed in small 10 kg batches, ensuring that the full potential of the raw ingredients is realised.
This pursuit of quality continues long after the brewing process has ended. To ensure that the sake is at its peak when it reaches the customer, freshly pressed sake is immediately bottled and undergoes “Binkan-Hiire” (bottle pasteurisation), followed by rapid cooling. By adhering to this method, they capture a youthful, fresh flavour and liveliness that stand apart from traditional tank storage.
Their aim is not to achieve a flashy or loud character, but a natural taste that gently accompanies everyday meals and remains enjoyable glass after glass. From the traditionally crafted “Sawanohana” to the contemporary and inspired “Beau Michelle”, Tomono Shuzo offers authentic local sake with a gentle yet assertive soul — a true reflection of the Shinshu Saku landscape, faithful to its philosophy: “To send from Saku a sake that touches and resonates in the heart.”
