Somen

Sōmen are fine noodles generally eaten cold in summer as they are refreshing. Their preparation is complex, and done by hand for the finest ones. The thinner the sōmen, the more expensive and rare they are. Cooking is very quick, rarely more than one to two minutes in boiling water. Rinsing them in iced water is necessary to stop the cooking. To enjoy them, you can dip them in a tsuyu very simple: soy sauce, spring onion, grated ginger, wasabi, a little broth dashi with katsuobushi. Outside of summer, sōmen are often eaten hot.
