It produces a numbing sensation similar to that of Chinese Sichuan pepper. Its fresh citrus notes give it a refreshing flavour.
It is rich in limonene, an active compound found in citrus fruit, containing more than any other type of sansho, and is also known for its high polyphenol content.

Sansho was produced exclusively and regarded as a precious gift, much coveted by Japanese feudal lords.
Budo sansho stands out for its notes of citrus, verbena and lemongrass, and its moderate heat.

Sansho is traditionally used in Japanese medicine. It is said to aid digestion by stimulating the appetite and improving digestive function, thereby helping to relieve indigestion and gastrointestinal problems.
It is also reputed to have antiseptic properties.
Japanese medicine notes that sansho contains hydroxy-alpha-sanshool, a compound with anti-inflammatory properties that may help reduce inflammation in the body, potentially benefiting conditions such as arthritis…
Sansho is also known for its antioxidant activity.
Finally, sansho is a good source of vitamins and minerals, including vitamin A, B vitamins, calcium, potassium and magnesium, which contribute to good overall health.

For these Budo sansho berries, the fruit is harvested before the seed forms and before any treatment is applied to the tree, while its heat and flavour are still subtle.
Budo sansho berries have a distinctive, invigorating flavour. To preserve the flavour of the freshly harvested berries, our artisan runs a processing workshop in the same area where they are grown. This proximity to the growing area helps preserve the products’ flavour and authenticity.
Immediately after harvesting, the berries are inspected, washed, blanched, cooled, dried, then salted with sea salt and finally sorted by colour.
