It is based in the Mikawa region of Aichi Prefecture, known for its warm climate and high-quality water sources, making it an ideal place to produce fine mirin.\u003cbr\u003eSumiya makes its mirin exclusively from glutinous rice (sweet rice), kōji culture and distilled rice alcohol.
