Warmer, sweeter notes follow, reminiscent of candied citron and angelica. On the palate, these berries deliver a brief, delicate heat, followed by a pleasant bitterness that quickly fades into a lingering finish with pronounced citrus notes. It is a subtle, delicate ‘pepper’ rich in aroma.

Lai Chau is a province in north-west Vietnam. This mountainous region lies between China and Laos. The harvesting of treetop pepper is entirely controlled by local ethnic communities. Nature is ever-present and unforgiving, and reaching the area from Hanoi takes several days. This pepper-like spice is harvested at the end of the year from a tree that grows wild in the mountains of the Indochinese peninsula. These berries come from Vietnam. It is called ‘treetop pepper’ not because it grows on high peaks, but because it is found at the tops of trees. French colonists called it ‘pepper flower’, while the English called it Indian prickly ash. It is closely related to Chinese Sichuan pepper and Japanese sansho, but is much more delicate, more elegant and easier to use than either. It also lacks the numbing effect of Sichuan pepper.
